Tasty low fat creamed spinach!


Bottom line...I LOVE to eat.  But, because I am health conscious most of the time, I am always looking for ways to lighten up things I love.  It makes me feel better to be able to eat a wonderful meal without having the guilt or the weight gain that comes with a calorie/fat laden meal.

I have tried creamed spinach in restaurants a couple of times, and loved it.   The downfall is that it is so full of calories.  And those calories are actually wasted.   You can make some awesome creamed spinach for easily 1/3rd the calories.

For starters, restaurants typically use heavy cream in their creamed spinach.  A cupful of the side dish can contain from 500-600 calories!   YiKeS!   I am gonna cut that drastically.   

I started with 1/2 a bag of spinach, but ended up using the whole bag.  Spinach cooks down sooo much.  Here we go...


Healthy creamed spinach

2 oz fat free cream cheese
1 teaspoon chicken stock
1/4 cup water
big dash of Cavendar's Greek seasoning
1 T fat free sour cream
1 bag of fresh spinach
freshly shaved Parmesan

First, add the cream cheese, chicken stock, water and Greek seasoning to a bowl and microwave on low heat until creamy.


Meanwhile, spray a nonstick skillet with Pam or lightly coat with olive oil and saute the spinach until completely wilted.  Only takes about 5 minutes over medium heat.


Next, add the spinach to the cream mixture and add the tablespoon of fat free sour cream.  Heat just about 30 seconds in the microwave.  Add a dash of pepper.


Put it on a plate and grate just a bit of fresh Parmesan cheese on top.  Not only is this packed with vitamins...hence the spinach, but the whole big ole serving has about 175-200 calories and the only fat is from the parm, so very little fat also.  And the best part is.....it is DeLiCiOuS!  


To make it beyond perfect...top it with a gigantic 18 oz slab of salmon.  Heaven on a plate!   :)
