Pocket tacos
Facebook is great for
getting ideas for what to cook for
supper. There are always drool-worthy
photos showing up that just really
make me hungry.
I saw this recipe pop up on
a friend's page and decided...Yep!
That is what's for dinner.
The recipe is pretty dang simple.
It would be great with leftover taco
meat. I didn't have any leftover so
I had to make some fresh, but it
still wasn't too bad.
Pocket Tacos
1 can large biscuits
1 can refried beans
Taco meat
(my taco meat was one pound
of meat with one packet of seasoning)
about 1-2 cups grated cheddar
Preheat oven to 375 degrees. Spray a cookie sheet with non stick spray to put the pockets on. Press one biscuit into about a 6" circle. Spread a thin layer of beans onto the biscuit, about one tablespoon. Top with a nice heaping spoon of cheese and then meat. Fold the biscuit dough over the toppings and press the edges with a fork. Poke a few holes in the top with the fork and place on the cookie sheet. Repeat for all biscuits. The recipe I used said bake for 10-15 minutes, but mine were not browning until about 20, so just use your judgement. I served these with diced tomatoes and sour cream. You can top with extra cheese, lettuce, salsa...or whatever is your fave topping! These are yummy!
