Bring on the meatloaf sandwiches!
I actually am writing this recipe in my blog previous to making it. I have combined about 8 recipes into one and am gonna try it!
Ingredients:
2 lbs lean ground beef
1 medium onion diced
1 bell pepper diced
2 eggs
2 t minced garlic
2 t Cavendar's Greek seasoning
3/4 cup quick oats
1/2 cup Panko bread crumbs
1/4 cup water
1/2 cup ketchup
2 T mustard
Sauce for topping:
1/2 cup ketchup
2 T brown sugar
2 T mustard
Preheat oven to 375 degrees. Saute the onion and green pepper in a bit of oil, just to soften them. Then add all the ingredients into a large bowl and mix very well. I used my hands because it makes it easier. After mixing, spread the mixture into a 9x13 baking pan and cook for 30 minutes at 375, then remove and coat well with the topping and cook for 30 more minutes. mmm.

This is the 1/2 way point, when I spread the sauce on top...
Here is the finished meatloaf...which was a delicious success...
The plate of stuff. Which included garlic mashed potatoes, mac and cheese, collard greens and Hawaiian sweet rolls.
The chocolate cake with strawberries and banana with whip cream...dessert....
End result...YUM! Bring on the meatloaf sandwiches!

Looks yummy!! I might have to try cooking meatloaf in a square pan. I usually use a cake pan with a rack to keep the meatloaf up out of the grease. But I don't have much grease since I started using half hamburger and half ground turkey.
ReplyDeleteThanks Evette! I used the really lean ground chuck and had almost no grease at all. I liked the result of the thinner layer of meatloaf in the 9x13. It seemed to cook better. :)
