41st birthday outfits and an EGGsperiment.

So this year, I turned 41.  
I have to say it was a GREAT birthday.
I worked until 12:00, 
then went shopping for a bit at the mall.
Eric came home with my present...a GPS watch that I have been wanting.
It is awesome!
Then he took me to Sam's Club and the Melting Pot in Memphis. 
The Melting Pot is my all time favorite restaurant, if you haven't been, you need to go, soon!
It was a great day!


This is the outfit I wore shopping.   I got the awesome scarf at Suzy's Suitcase in Newbern.   It has soo many colors in it.  It goes with almost anything.


This is a cute chevron print dress that I got from Rue 21.  Added a belt, some leggings and boots, I loved it!

Now that my birthday is over...
back to some cooking.

So for a while now, I have been wanting to try this avocado egg bake thingie that I have been seeing on Pinterest.  

It made for a pretty picture....


Taste wise, I am kinda up in the air.
 The baked avocado took on a completely different flavor than a cold avocado.  A flavor that I am unsure of.  
I can easily say I didn't LOVE it. 
 I may actually try it again in the future and maybe bake it just a little less. 
 I baked it at 375 for about 35 minutes.  
Next time, I will probably bake it for 25 minutes.  I actually took it out at 25 minutes and took this picture below, but cooked it 10 more minutes.
I think I may have like it more with the yolk runny.



I am glad I tried it and encourage you to do so if you like avocados and eggs.

  1. First of all, I LOVE that dress!!! So cute! And I agree about the egg thing. Runny yolk is always better. Don't know if I would like warm avocado though.
