Super simple homemade pizza.


Pizza is undeniably one of the best foods on the planet.  And of course, it follows the general rule that if something is really really good, it probably isn't good for you.

That being said, it is possible to have your pizza and eat it too!  By making your own, you can pick your favorite toppings and know exactly what you are eating.

For the crust, I use the kind in a packet and 1/2 of the packet is the perfect size for one person, and is only 300 calories.


Just follow the directions on the package to prepare the dough.  This picture is of the ball of dough that is waiting to set for 5 minutes.  
Spread the dough onto a greased cookie sheet and bake at 425 for about 3 minutes, then you are ready for the toppings...

I happen to love roasted tomatoes, so I sliced some grape tomatoes, topped them with garlic and some Italian seasoning, and cooked them in my toaster oven until nice and roasty.


Because I had tomatoes, I didn't need any sauce on mine.  I like to focus on the cheeses.

My cheeses included sharp white cheddar, mozzarella and fresh grated Parmesan.


Now, just pop it back into the oven until it is done to your liking.  I like mine pretty crispy, so it cooked for about 15-20 more minutes.  I just kept looking at it every 5 minutes.
